Vegging out can be good for you

A couple of weeks ago, we watched Jamie’s Ultimate Veg on PBS.

Everything Jamie Oliver fixed looked incredible. Of course, he is selling a companion cookbook, so we bought one.

Tonight, we tried our second recipe from the book, the Silky Omelet Baguette, for dinner. It was very good — simple, quick, inexpensive and relatively healthy at 852 calories and 115g of carbohydrates.

I know it’s not truly vegetarian, but I’m pretty sure we will fix it again. And this is a cookbook that we’re likely to use a lot.
